TURBO PORK STEW & CHEESY DUMPLINGS

This name came from when I first moved out into my own house. I used to make this stew for my mates using a cheap cider which was called Turbo. It was like paint stripper. Not an apple in sight. My mates seemed to eat and like it, probably because we were all drunk. All the money in the world wouldn’t change those memories. Great times with the lads.

2 tbsp vegetable oil

300g carrots, peeled and cut into chunks

300g swede, peeled and cut into chunks

300g parsnips, peeled and cut into chunks

1 onion, chopped

4 garlic cloves, chopped

700g pork shoulder steaks, cut into chunks

1½ tbsp plain flour

300ml chicken stock

400ml dry cider

1 bay leaf

2 tbsp brown sauce

½ tbsp Worcestershire sauce

½ tbsp wholegrain mustard

2 tsp chopped thyme leaves

½ tsp caster sugar

¼ tsp salt

¼ tsp pepper
